Buttercream Icing:

There are many interpretations to buttercream icing, over the years of teaching I have fine tuned this icing technique to withstand any weather condition in Queensland. If you would like the recipe message me!!!

When mixing this icing the secret is not to over beat (aerate) as too much beating will turn this icing into a frosting. The icing should be smooth and heavy with no air bubbles when you smooth with a palette knife, white and creamy as I use vegetable shortening instead of butter.
